Happy First official Blog post! There is sure a lot to be happy about today….this is truly an exciting time. Fall is here, kids are back in school and October is in full swing. The leaves are starting to change and the weather is slightly getting cooler. I sure love this time of year.
For years, I have wanted to start a blog but always putting it off, but not today. I’m taking leaps (definitely out of my comfort zone as I’m a type B personality) and strides and can’t wait to start making new adventures and friends along the way. I feel like a kid starting the first day of school, you don’t know what the day will bring, who’s in your class and what the school year will bring; you’re anxious to see how everything will unfold.
When I was younger, my mom would always say “make sure you don’t skip breakfast; you need your brain fully awaken and ready to go”. For many years I lived by that rule but then life ended up getting in the way and bang I’m running out of the house in a rush to get a head start on the traffic and never having time for breakfast, I quite wonder how many others are in the same boat as I am. Are they stopping and getting something quickly or maybe eating a Pop Tart in the car. I hate to admit this but I have done this too many times to count.
This past weekend I found myself thinking if I was starting school again, what would I have? Then that little light bulb (you know what I’m talking about) went off. I ran into the kitchen and made the perfect on the go egg benedict breakfast bites with hints of hollandaise sauce throughout. Who says you can’t have a fancy breakfast on a weekday, not I.
These Eggs Benedict bites are perfect for on the go while sitting in traffic, dropping your kids off or at your desk before the craziness of your day begins. I guess you can say I’m technically starting the first day of school.
